- Step 1: marinate 1 1/2 pounds bite-size chicken thighs with 3/4 cup yogurt, 1 tablespoon lemon juice, 4 minced garlic cloves, 1 tablespoon grated ginger, 2 teaspoons garam masala, 1 teaspoon cumin, 1 teaspoon smoked paprika, and 1 teaspoon kosher salt. Let it sit at least 30 minutes or up to overnight.
- Step 2: cook the marinated chicken over very high heat, either under the broiler or in a hot pan, until it picks up color and a little char on the edges. It does not need to finish completely yet. That early char is what gives the final sauce a deeper, more complete taste.
- Step 3: start the sauce base with 2 tablespoons butter and 1 tablespoon oil, then cook 1 finely diced onion until soft and lightly golden. Add 3 minced garlic cloves and 1 tablespoon grated ginger and cook just until fragrant.
- Step 4: add 1 1/2 teaspoons garam masala, 1 teaspoon cumin, 1 teaspoon coriander, 1/2 teaspoon turmeric, and 1/4 to 1/2 teaspoon cayenne. Bloom the spices for about 30 seconds, stirring constantly so they do not burn. Then stir in 1 tablespoon tomato paste.
- Step 5: pour in the 15-ounce can of tomato sauce and let it simmer until the raw tomato edge softens and the sauce begins to look richer and slightly darker. This is where the spices and tomato stop feeling separate and start becoming one body.
- Step 6: lower the heat and stir in 3/4 cup heavy cream and 1 teaspoon sugar if desired, then season with salt to taste. Once the cream is in, keep the simmer gentle so the sauce stays smooth and balanced.
- Step 7: return the chicken and all its charred edges to the pan and let it finish gently in the sauce until fully cooked through. Now the smoky chicken and silky masala come together. The sauce should cling to the meat, not run away from it.
- Step 8: serve the chicken tikka masala over basmati rice and finish with chopped cilantro. The goal is a plate that feels rich but balanced, creamy sauce, warm spice, tender chicken, and fluffy rice catching every spoonful.
