Instructions
- Bring 4 litres of water to a boil in a large pot and salt it heavily with 40 grams of fine sea salt.
- Put a large heavy-bottomed copper or stainless saute pan on medium-low heat. Add the guanciale lardons cold, without oil, and let them render slowly for 3 to 4 minutes until they are deep golden-brown and crisp on the edges; turn off the heat for 30 seconds if smoke appears.
- Return to medium-low heat, add the diced onion to the rendered pork fat, and sweat gently for 4 to 5 minutes until completely translucent and soft but not browned.
