Ingredients
- 2 cups (500 millilitres) strong espresso or very strong brewed coffee
- 1/3 cup (65 grams) sugar
- A tiny pinch of salt
- 1 cup heavy cream (for serving)
Instructions
- Brew 2 cups of strong espresso.
- Immediately stir in 1/3 cup of sugar and a tiny pinch of salt into the hot espresso until every grain dissolves completely.
- Let the sweetened coffee cool to room temperature; never pour hot coffee into the freezer.
- Pour the cooled coffee into a wide, shallow metal dish, about 2-3 centimeters (1 inch) deep.
- Slide the dish flat into the freezer at minus 18 Celsius (0 Fahrenheit).
- Freeze for thirty minutes, then drag a fork all across the surface, breaking the ice into crystals.
- Return to the freezer and repeat the scraping process every thirty minutes for about three to four hours.
- Continue until the whole dish is a light, fluffy pile of separate, glistening dark-brown crystals.
- Just before serving, whip 1 cup of heavy cream to soft peaks, without any sugar.
- Spoon the granita into chilled glasses, right to the top, then crown it with a generous soft dollop of the unsweetened whipped cream.

- Whipped Espresso Granita is an elegant frozen coffee from Sicily, traditionally made with just a fork, not an ice cream machine.
- Granita is Sicilian to the heart, originating near Mount Etna where snow was once flavored, and coffee granita is a pride of Catania and Messina.
- Coffee granita, or granita al caffè, is distinct from a slushie, as it is scraped by hand into fine, glistening crystals.
- Strong espresso or very strong brewed coffee is essential because freezing mutes the flavor.
- Sugar and a pinch of salt must be stirred into the hot espresso immediately until completely dissolved, as cold coffee will not dissolve sugar.
- The sweetened coffee should be poured into a wide, shallow metal dish, about 2-3 centimeters deep, for fast, even freezing and easy scraping.
- The secret to granita is scraping it with a fork every thirty minutes for three to four hours to break ice into crystals before they set into a solid block.
- The granita is ready when it forms a light, fluffy pile of separate, glistening dark-brown crystals, resembling coffee-flavored snow.
- Unsweetened heavy cream, whipped to soft peaks, is served alongside the granita so the espresso remains the star.
- Granita should be served immediately in chilled glasses, often with a warm brioche col tuppo for dipping, especially for breakfast.
