- Willkommen. Today we bake Christstollen, the King of Christmas pastries from Dresden traditions. We begin by soaking raisins, almonds, and homemade candied citrus peel in dark rum for flavor depth and preservation during ripening.
- Ja, ze secret starts vith ze yeast starter. Dissolve yeast in lukewarm milk vith a little sugar until frothy. Zen mix in butter, yolks, cardamom, and mace. Knead until ze dough is smooth and strong, and let it rise until doubled.
- Now shape ze loaf. Flatten dough, place marzipan log in ze center, and fold into ze classic lopsided form. Press a trench near ze hump and remove exposed raisins so zey do not burn in ze oven.
- Achtung: ven baked and hot, poke small holes and brush heavily vith melted butter. Zen coat generously in powdered sugar. This butter-sugar seal locks moisture and protects ze loaf during storage.
- Wrap tightly and ripen in a cool place for two weeks. Then slice and serve. You get a moist crumb, tender marzipan core, and fully matured holiday aroma. Frohe Weihnachten.
